  Ras el Hanout Spice Blend

Yields about 2 1/2 tablespoons

This unique blend can contain up to 30 different ingredients, many of them considered aphrodisiacs in Morocco. This simpler version goes well with sweet tagines.

2 teaspoons ground nutmeg
8 threads Spanish saffron, crushed
3/4 teaspoon freshly ground pepper
1/2 teaspoon ground mace
1/4 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon allspice
1 teaspoon salt

Combine the ingredients. Place in a tightly sealed container and store in a cool, dark place.
