  Mint Tea

Morocco's national drink of mint tea, uses spearmint, the common backyard mint. It is traditionally served very sweet. It is also good iced.

1 bunch fresh spearmint, rinsed and drained
4 to 5 cups boiling water
1 tablespoon Chinese (NOT Japanese) green tea (do not use black tea)
Sugar to taste.

Place the tea in a teapot. Add boiling water and steep for a couple of minutes. Add the mint to the pot. Steep for a few minutes. Add sugar to taste. Serve in mint tea glasses or small cups.
